Ingredients

  • 8 pieces small corn tortillas preferably soft and slightly sweet
  • 1/2 pound ground beef or ground turkey for a leaner option
  • 1 cup shredded cheddar cheese sharp or mild, based on preference
  • 1 cup lettuce shredded for crunch
  • 2 medium tomatoes diced for freshness
  • 1/2 cup salsa smoky chipotle preferred
  • 1/4 cup cilantro chopped for brightness
  • 1 lime lime cut into wedges for squeezing
  • 1 tbsp oil vegetable oil
  • to taste salt and pepper for seasoning

Equipment

  • Small skillet
  • Spatula
  • Knife and cutting board
  • Serving platter

Method

  1. Warm a small skillet over medium heat. Place tortillas one at a time in the skillet for about 30 seconds per side until they’re soft and pliable, then wrap them in a clean towel to keep warm.
  2. Add a tablespoon of vegetable oil to the skillet, then add the ground beef. Cook, breaking it apart with a spatula, for about 8-10 minutes until deeply browned and fragrant with caramelized bits. Season with salt and pepper as it cooks.
  3. While the meat cooks, prepare your toppings: shred the cheese, chop the lettuce, dice the tomatoes, and chop the cilantro. Arrange everything within easy reach for assembly.
  4. Once the meat is browned and aromatic, remove it from the heat. Taste and adjust seasoning if needed.
  5. Take a warm tortilla, spoon in a generous amount of the seasoned meat, then sprinkle with shredded cheese and top with crunchy lettuce and diced tomatoes. Add a spoonful of salsa and a squeeze of lime for brightness.
  6. Repeat the assembly process for all tortillas. Serve immediately on a platter, garnished with chopped cilantro and lime wedges for extra flavor.
