Ingredients
  

  • 1 loaf sandwich bread (baguette or ciabatta) preferably sliced into small rectangles
  • 8 oz container herbed cream cheese or Greek yogurt for a lighter spread
  • 4 oz slices salami or other deli meats like turkey or chicken
  • 1 cucumber cucumber thinly sliced
  • 4 oz slices sharp cheddar cheese or soft cheese like goat cheese
  • a few leaves fresh basil or other herbs like dill or chives

Method
 

  1. Slice the bread into small, neat rectangles about 1.5 inches wide, keeping the crusts on for texture. Use a serrated bread knife for clean cuts.
  2. Spread a thin layer of herbed cream cheese evenly over each bread piece using a butter knife, covering the surface completely without overloading.
  3. Layer 2-3 slices of salami or your preferred deli meat on top of the cream cheese, slightly overlapping for a colorful, full look.
  4. Add a slice of sharp cheddar or your choice of cheese on top of the meats, folding or rolling the meat for added visual interest.
  5. Place a thin slice of cucumber on top of each bite for crunch and freshness, pressing gently to set everything in place.
  6. Arrange all the assembled mini sandwiches on a tray or platter lined with parchment, repeating the process for all pieces.
  7. Cover the tray with cling film and chill in the fridge for 15-20 minutes to let flavors meld and fillings set.
  8. Just before serving, garnish with small basil leaves or your preferred herbs for a fresh, vibrant finish.
  9. Cut the bites in half diagonally if desired for a more polished presentation, then serve immediately or keep chilled until ready to enjoy.
