Method
- Place the eggs in a saucepan and cover with water. Bring to a boil over medium-high heat, then reduce to a simmer and cook for 10 minutes. Drain and transfer eggs to cold water to stop cooking, then peel once cooled.
- Slice each peeled egg in half lengthwise and carefully remove the yolks into a mixing bowl, setting the whites aside.
- Mash the yolks with mayonnaise, mustard, salt, and pepper until smooth and creamy. Adjust seasoning to taste.
- Add a few drops of red food coloring into the yolk mixture and stir until well combined, giving the filling a bloodshot hue.
- Use a piping bag or a small spoon to fill each egg white half with the colored yolk mixture, creating a smooth, rounded appearance.
- Cut tiny rounds from pimientos or cherry peppers to serve as the pupils and place one on each yolk filling, pressing gently to adhere.
- If desired, dot tiny bits of black gel food coloring onto the yolks to create bloodshot veins, adding a disturbing detail.
- Arrange the decorated eggs on a serving platter and chill briefly to set the toppings. These creepy eyeball deviled eggs are now ready to serve at your Halloween party!
Notes
For more realistic effects, vary the sizes of the pupils and add veins with a thin brush. Keep the eggs refrigerated until ready to serve for best freshness and appearance.
