  • 3 cups cold water for dissolving gelatin
  • 3 tablespoons gelatin powder flavored or unflavored
  • 1.5 cups fruit juice preferably red or pink (e.g., cherry, raspberry)
  • 1 cup whipped topping for added creaminess
  • few drops red food coloring optional, for more vivid color

Method
 

  1. Pour 1 cup of cold water into a saucepan and sprinkle the gelatin powder over the surface. Let it sit for a minute to soften.
  2. Gently warm the mixture over low heat, stirring constantly until the gelatin is completely dissolved and the liquid is clear. This takes about 2-3 minutes and begins to emit a gentle aroma.
  3. Remove the saucepan from heat and stir in the remaining 2 cups of cold water, fruit juice, and a few drops of red food coloring until well combined. The mixture should be bright red or pink and smooth.
  4. Pour the gelatin mixture into the brain-shaped mold, filling it about halfway. Place it in the refrigerator for about 15 minutes to partially set but still be slightly jiggly.
  5. While the first layer is setting, beat the whipped topping until smooth and fluffy, then gently fold it into the remaining gelatin mixture. This creates a creamy texture and adds a fun, cloudy appearance.
  6. Once the first layer is slightly firm, carefully pour the whipped topping and gelatin mixture over it, filling the mold completely. Smooth the surface with the back of a spoon if needed.
  7. Cover the mold lightly with plastic wrap and return it to the refrigerator. Chill for at least 4 hours, or until the gelatin is fully set and firm to the touch.
  8. Once fully chilled, carefully invert the mold onto a serving platter and gently peel away the mold to reveal the colorful, brain-like shape.
  9. Slice into portions and serve immediately, showcasing the intricate, squishy layers and vivid color variations that resemble a spooky brain.

Notes

For extra effect, add a drizzle of berry syrup or edible glitter before serving.
