- Pour 1 cup of cold water into a saucepan and sprinkle the gelatin powder over the surface. Let it sit for a minute to soften.
- Gently warm the mixture over low heat, stirring constantly until the gelatin is completely dissolved and the liquid is clear. This takes about 2-3 minutes and begins to emit a gentle aroma.
- Remove the saucepan from heat and stir in the remaining 2 cups of cold water, fruit juice, and a few drops of red food coloring until well combined. The mixture should be bright red or pink and smooth.
- Pour the gelatin mixture into the brain-shaped mold, filling it about halfway. Place it in the refrigerator for about 15 minutes to partially set but still be slightly jiggly.
- While the first layer is setting, beat the whipped topping until smooth and fluffy, then gently fold it into the remaining gelatin mixture. This creates a creamy texture and adds a fun, cloudy appearance.
- Once the first layer is slightly firm, carefully pour the whipped topping and gelatin mixture over it, filling the mold completely. Smooth the surface with the back of a spoon if needed.
- Cover the mold lightly with plastic wrap and return it to the refrigerator. Chill for at least 4 hours, or until the gelatin is fully set and firm to the touch.
- Once fully chilled, carefully invert the mold onto a serving platter and gently peel away the mold to reveal the colorful, brain-like shape.
- Slice into portions and serve immediately, showcasing the intricate, squishy layers and vivid color variations that resemble a spooky brain.
